Tonight I made some delicious Sweet & Sour Chicken with rice and veggies. It is very easy and quick to prepare, perfect for a last minute but healthy dinner. Here is all you need for 2 people.
2 Chicken breasts
2 bags of Yasmine Rice ( I used the one that is already sorted in bags by portions)
2 Big Carrots
1 Jar of Sweet & Sour sauce
Pinch of salt and pepper
1 bag of baby spinach
Set the oven to 200 C, meanwhile cut the carrots and broccoli and boil them in salty water for about 10 minutes. Put some salt, pepper and olive oil on the chicken breasts and place in the oven, cook until the skin is brown and crusty (about 15-20 minutes). Then boil water for the rice, about 5 Dl, place the rice in the pot and boil for 20 minutes. When everything is ready on your plate then warm up carefully the Sweet & Sour sauce and add to your dish!
Ready in 30 minutes and so yummy!
